Easter Monday, the day after Easter. You wake up feeling like you ate a weeks worth of food in one day (because you did) and possibly nursing a cheeky little hangover.
There is only one cure, getting out of the house! We have a little tradition of heading for a picnic in the sunshine.
Easter Monday Picnic
The ocean cures everything and makes you feel instantly alive plus keeps the kids happily entertained, so the location is a no brainer. We pack up all the necessities, A beautiful rug, some cushions because you never know when you might need a nap and some delicious but light lunch.
On the menu this year is an easy but tasty bruschetta and ice tea cocktails to wash it all down. In Australia we have so many beautiful beaches that we are spoilt for choice. My advice is definitely take the road less traveled.
Find yourself a remote little patch of sand that isn't crowded. Where you can turn your radio up that little bit louder. Somewhere with enough space you can hit a ball (we are Australian after all) and stay till the sun meets the horizon!
1 cup of cherry tomatoes halved
1/4 cup red onion
1/4 cup chopped fresh basil leaves
Salt & Pepper
Drizzle of Olive oil
Combine well in a bowl
Turkish bread sliced
Drizzled with balsamic vinegar
Topped with rocket & feta
Serve - Delicious

Over plenty of ice cubes mix
50ml tea mixer (we used strawberry swoon)
1 cup sparkling water
1 nip vodka
Lime slices
Strawberries
Plenty of fresh mint
Not up for an alcoholic beverage? It is still delicious without the vodka!
